Eggy in a Basket

Ingredients
  • 2 eggs
  • 2 slices of bread
  • Butter
  • salt and pepper to taste
  • Round cookie cutter (optional)
Instructions
  1. With a cookie cutter or knife, cut out a hole in the bread slice. My hubby likes to cut out a square but I think its supposed to be round. Make sure the hole is big enough to fit most of the egg.
  2. Butter one side (or both. If you butter one side, cook the buttered side down first) of the cut bread slice, grease a skillet and pre-heat it at medium heat. When the pan is nice and hot add the bread slice and crack the egg in the hole.
  3. When the egg has set flip it and cook the bread slice on the other side until the egg is fully cooked. My husband likes to scramble the yellow a bit in the pan (before the egg sets) but that is his personal preference.
  4. Sprinkle with salt and pepper to taste and enjoy! :)
