First things first, Happy Thanksgiving to you 😀 and Happy Birthday to my big Brother! He has a Thanksgiving Birthday this year 🙂 Yay!
Okay back to your regularly scheduled food blog post 😛 I had purchased golden raisins for a different recipe but since I don’t make it a habit to eat raisins I needed to do something with them instead of letting them sit for an eternity in my pantry. That’s partially how this oatmeal recipe was born. At first, I was making my oatmeal with cinnamon and these golden raisins but one day it dawned on me I could sub that for pumpkin pie spice for a nice variation! So there you have it, if you have extra pumpkin pie spice sitting around you can use it to make this oatmeal recipe 😉
I hope you enjoy this recipe as much as I have for the past month and a half 🙂
- ½ c. oatmeal (old fashioned oats not the steel cut oats)
- 1 c. Milk
- 2 tbsp. golden raisins
- ¼ tsp. pumpkin pie spice
- 1 tbsp. honey (or more to taste)
- Heat the milk over a medium heat with the raisins (this will help to soften them).
- Just before the milk starts to boil (when you see some steam coming out) add the oatmeal, pumpkin pie spice, honey and stir. Keep stirring so the bottom doesn't burn. Cook for as long as the oatmeal packet suggests and serve.
